The best part - to save you time, you don't even have to bake the cookies!

Enter Simple Mills

Simple Mills offers delicious paleo and grain free cookies, cake mixes, muffins, crackers, pancake mixes, and even pizza crust. I love their cookies as a special treat without all of the work. Most of their products are available at Whole Foods and select products are available at Earth Fare. Recently, I even have seen some of their products in Target. However, my favorite and the most cost effective place to get them is Thrive Market.

Chocolate Options

I like having some flexibility when I'm baking or cooking. So for that reason, I'm listing some alternatives so you can buy what you would like or maybe use what you already have on hand.

  • Enjoy Life or Pascha brand chocolate chips (both available on Thrive Market, Enjoy Life is more readily available in most grocery stores.)

  • Melt chocolate bars instead. You would have to play with the amount since I used chocolate chips instead. A good start would probably be 2-3 full sized bars. Bars I recommend would be Pure7 (sweetened with honey) or Eating Evolved.

Coconut Manna (also called butter)

I really like Artisana brand of coconut butter as a quick pantry staple. A spoonful of this is also a delicious snack. I like the texture and taste of this brand compared to others that I have tried.

If you have extra time, you can also make your own coconut butter. If you are trying this, I do recommend that you use a heavy-duty food processor. I have a Cuisinart 11-cup Prep Plus and it has a heavy base so it doesn't move or shake when you are making coconut or nut butters. I have tried other models and was not happy with how they chopped or pureed foods.

Paleo Chocolate Covered Cookie Crunch Bites

Serves: 16-18

Ingredients:

Chocolate:

  • 1 cup of dark chocolate chunks

  • 3/4 cup of coconut manna

  • 1/2 teaspoon vanilla

  • 2 tablespoons unrefined, coconut oil

  • 4 drops Young Living Peppermint Vitality Essential Oil

    Cookies:

  • 1 box of Simple Mills chocolate chip cookies

Instructions

  1. In a double boiler, add chocolate chips, coconut oil, and coconut manna over medium to low heat. Stir often to melt.

  2. Once melted, add vanilla and peppermint essential oil.

  3. In a food processor, add chocolate chip cookies and pulse until you have a course crumble.

  4. Using silicone candy molds, spoon some of the chocolate mixture into the bottom, 1/3 of the way.

  5. Then add some cookie crumbs, allowing room for another layer of chocolate.

  6. Fill the remaining space left with chocolate.

  7. Put in the refrigerator to help them set for 1-2 hours.
